I see the phrase, "sins unto death" mentioned from time to time, but I really don't understand what it is. The only sins that I know of that can't be forgiven are blasphemy against the Holy Ghost and taking the mark of the beast. If you include adultery in this category, why then is David seem to be given a "pass" on this? I know that because of this that the child was not allowed to live. but why did God continue to bless David afterwards? Or is that just my perception?

Look into the new testament teaching of adultery.
It's a higher criteria than the old testament.
We are not in old testament times but in new testament times.
Someone can attempt to justify David's sin and choose to accept that it's not so strict anymore??
By no means at all.
Someone can attempt to justify that we shouldn't condemn the sins of elders as it was stated in the old testament "don't strike king Saul as he is the lords appointed".
By no means at all.

Old testament:
1 Samuel 24:6
And he said unto his men, The LORD forbid that I should do this thing unto my master, the LORD'S anointed, to stretch forth mine hand against him, seeing he is the anointed of the LORD.
But
New Testament:
1 Timothy 5
19: Against an elder receive not an accusation, but before two or three witnesses.
20: Them that sin rebuke before all, that others also may fear.

Thus can be one explanation....
The sins unto death originates from the old testament.
The teaching is that no sin is allowed and it's every sin that we need to hate, repent and confess to be forgiven.
However, there are particular sins in the old testament for which Gods people they were stoned to death, because of the severity of the sins.
They were not stoned to death for every sin.
So there are differences in sins.
The new testament in 1john 5 states there are sins unto death and sins NOT unto death.
Does that mean there is a sin that doesn't lead to death?
Every sin leads to death.
The wages of sin is death.
But the teaching and point in 1john 5 is the levels of sin in question.
Levels of sins where a member can be forgiven by the church and reinstated after discipline, over some sins that the member CANNOT be reinstated by the Church.
This is the point in question.

1 John 5
16 If any man see his brother sin a sin which is not unto death, he shall ask, and he shall give him life for them that sin not unto death. There is a sin unto death: I do not say that he shall pray for it.
17 All unrighteousness is sin: and there is a sin not unto death.
